I know a lot of you out there are not veggie, but that doesn’t mean you can’t have a meat-free meal every now and again AND enjoy it.
Here are a few of my favourite vegetarian meals that are really easy to make and they are meals that everyone will love – even the meat-eating men of the world! And no you won’t become iron deficient after one meat-free meal, trust me.

Stuffed butternut squash with quinoa and feta
A friend got me on to this one. And yes, it was a meat eating friend who said they would happily eat this instead of meat any day of the week. Go on, try it!
Quorn Chilli Con Carne
I don’t eat an huge amount of ‘fake meat’ as I prefer to eat veggies, but every now and again it provides a great basis to a family-favourite meal, and is wonderfully filling and comforting. Quorn mince is an incredibly realistic mince substitute, as it takes on the flavour whatever you are cooking. I once made this chilli for me, and a real meat one Mr B, and he couldn’t tell the difference when I blind taste tested him!

Creamy parsnip soup
I love any veggie soup to be honest, as long as it is home made and not from a godawful tin (ugh). I don’t normally follow a recipe for soup as they follow such a simple formula (on the whole: soften onions, add veggies of choice, add stock, boil, add herbs, spices or cream if required, blitz in the blender, eat) but parsnip soup is Mr B’s favourite so here is Jamie Oliver’s Spicy Parsnip Soup recipe in case you fancy giving it a go.
Baked brie and wild mushroom tart
And for something special, this is just amazing. I have had this for my Christmas dinners for a few years and I just love it. It is so, SO tasty. One year we had an issue with the Turkey and I thought I was going to have to share this with seven of my hungry family members. I was panicked! Luckily, the meat situation was rectified and I was able to gobble this on my own!
