This one pot pasta meal really does what it says on the tin – you only use one pot. Seriously! You throw everything in and you don’t even need to drain the water out at the end. You’ll have beautifully cooked pasta and a delicious sauce all in one.
I love it because it is so quick and easy which makes it the perfect mid week meal when you want something delicious but time is of the essence. Minimum prep, effort and washing and maximum taste.
And it is spaghetti, so you know, I was always going to love it!
This has become a weekly staple in our house, and I think it will in yours too once you try it.
One Pot Pasta
To make enough for two people, you’ll need:
A handful of spaghetti or linguine
A punnet of cherry tomatoes, halved
1/2 an onion, chopped thinly
2 cloves of garlic, sliced as thinly as you can
1 pint of vegetable stock
A handful of black olives (de-stoned)
A large handful of basil, torn
A pinch of chilli flakes
A large pinch of dried oregano/Italian herbs
A glug of olive oil
Salt and pepper to taste
Plenty of grated cheese to top – Parmesan is good
Firstly, chop up all your ingredients – the onion, tomatoes, olives and garlic. Add the spaghetti to a saucepan, followed by your chopped ingredients, dried ingredients and then tear in the basil. Add a glug of oil, pour over the stock and season.
Bring to the boil, pushing in your spaghetti as it softens until it is completely submerged. Once at it is boiling, reduce the heat to a simmer. It is going to take about 8-10 minutes to cook so keep stirring every now and again until your pasta is cooked and you have a velvety sauce. No need to drain!
Serve into bowls and sprinkle over your cheese.
As an aside, let’s talk cookware. Is anyone else particular about their pots and pans? I am – I think it happened around the 30 mark for me! I definitely wanted higher quality cookware, that performed well and looked nice in my kitchen.
